Frosted Cinnamon Bun Coffee Donuts

2 cups flour
1 cup sugar
2 teaspoons baking powder
2 teaspoons coffee, finely ground*
2 teaspoons cinnamon
1 teaspoon nutmeg
½ teaspoon ginger
½ teaspoon salt
2 eggs, slightly beaten
1 cup whole milk
2 tablespoons butter, melted
1 tablespoons vanilla extract
½ cup butter, melted
½ cup granulated sugar
2 teaspoons cinnamon
Heat oven to 350 degrees. Generously spray donut pans with cooking spray.

1. In a large bowl combine dry ingredients.
2. In a small bowl combine eggs, milk, butter and vanilla.
3. Add egg mixture to flour mixture and stir just until combined.
4. Fill donut pans ¾ full and bake for 15-17 minutes. (Toothpick in center of donut should come out clean.) Cool 5 minutes. Invert pan onto baking sheet. (If donuts stick, loosen donuts gently by running a butter knife along outside of donuts or tapping on the bottom of donut pan)
5. Place sugar and cinnamon in a gallon size storage bag. Lightly brush donuts with butter and place them in bag two or three at a time. Shake gently until donuts are covered with sugar. Place donuts on serving plate and enjoy! Makes 12 regular size donuts or 18 mini donuts.

*Grind beans on finest setting until coffee resembles powdered sugar
