Applesauce Curry Me Home Soup

I love to cook and I love competing so….. when I saw a recipe contest that involved creating a recipe and winning a prize, I thought I’d give it a try. The great thing about the contest is I got to try a new product that is not only delicious but low in sugar and good for you.

I know that sounds like an oxymoron but trust me it is not. You see…..their product involves apples and the product is called “Simply Wholesome Foods Applesauce”  Their applesauce comes in three varieties, unsweetened, a touch of honey and honey and cinnamon and was created by the Hess Family. The list of ingredients is simple…..Apples, lemon juice, honey, cinnamon. I think they should have named it Simply, Wholesome and Delicious! With 60 calories for a ½ cup, it is low in calories and a great snack or even lunch at my house. . 

It is also delicious in my Curry Soup which has ⅔ of a cup and adds a wonderful sweetness to the spiciness of the curry. The recipe has 8 basic ingredients and is easy to make and even easier if you use already cooked chicken. So, try it and if you like it get your own

Applesauce Curry Me Home Soup 1 large boneless skinless chicken breast (⅓ to ½ lb) or 1½ cups shredded cooked chicken* ¼ cup butter, divided 2 tablespoon olive oil 1½ cup diced onion 3 cloves minced garlic 1 tablespoon curry powder ¼ cup flour ½ teaspoon chicken bouillon granules 1½ cups chicken broth ⅔ cup Simply Wholesome Foods Applesauce with a touch of honey and cinnamon 1 cup half and half Salt and pepper to taste 1.Cut chicken into small bite sized pieces. In a dutch oven or large pot cook chicken over medium high heat in 2 tablespoon butter and olive oil, until no longer pink and starting to brown. Remove chicken and set aside. 2.Reduce heat to medium and add remaining 2 tablespoons of butter and onion. Cook until onion is tender and almost translucent (about 6-7 minutes) Add garlic and cook a minute longer. 3.in a small bowl combine ½ cup chicken broth, flour, curry powder and chicken bouillon. Stir until all lumps are gone. Slowly pour mixture into onion and stir until sauce starts to thicken, about 1-2 minutes. Add applesauce, remaining broth and chicken. Simmer for 5 minutes. 4. Add half and half and season with salt and pepper to taste. Simmer an additional 5 minutes. Garnish with finely diced apple, crackers or cilantro. Cayenne or more curry may be added for additional spiciness. *If using shredded chicken, omit step 1
