A Healthy Solution to Dinner


I got a new waffle iron for Christmas but I haven’t used it yet. I love waffles and I’ve been seeing all kinds of recipes for some really different combinations. I always think of waffles for breakfast but I’m usually too lazy to make breakfast so I decided to try some savory ideas and maybe try one of them for lunch or dinner.

Then I saw a recipe contest, sponsored by a company that's called “Healthy Solutions Spice Blends”. They make all kinds of seasoning packets that are low in sugar and salt and have no preservatives. All of the spices are combined to make it simple to use. That works for me since I suffer from pure “LAZY” which simply means I like something easy where I don’t have to do much work and I can take credit when it turns out delicious.

Now back to my new waffle iron…..So, I wanted to figure out a recipe where I could use Healthy Solutions Shrimp Scampi Seasoning Blend and also use my new waffle iron. I researched some recipes and finally created a simple, spicy crab waffle which features the scampi seasoning in the waffle and also in the mushroom scampi sauce. It turned out yummy and became our dinner. That’s a win-win for me!

Crispy Crab Waffles with a Mushroom and Boursin Scampi Sauce.

6 oz cooked crab, flaked or chopped
½ cup panko bread crumbs, divided
2 tablespoons mayonnaise
1 tablespoon finely diced jalapeno pepper
1 teaspoon cilantro paste
⅛ teaspoon cayenne
1 tablespoon Healthy Solutions Shrimp  Scampi Spice Blend
1 egg
2 tablespoons olive oil
6 oz portobello peppers, sliced
½ cup chicken broth
½ cup cream
3 oz Boursin
1 tablespoon Healthy Solutions Scampi
1 teaspoon citrus balsamic vinegar or lemon juice

Heat waffle iron to medium and coat with cooking spray.

Crab Patty
Combine crab, ¼ cup panko, mayo, pepper, cilantro, cayenne, spice blend and egg in a small bowl until combined. Place remaining panko in a shallow bowl. Carefully form mixture into 2 patties with your hands and press gently into remaining panko in bowl, pressing crumbs into patties on both sides. (You may need additional panko. You want enough crumbs to just lightly coat patty so it will hold together.) Place patties on wax paper and cover with another sheet of wax paper. Refrigerate for 20 minutes.

Cook waffles over medium heat for 3-4 minutes or until golden brown. Cover to keep warm while you prepare sauce.

Sauce
In a skillet, over medium heat, saute mushrooms in olive oil until tender.      
Add broth, cream and spice mix. Bring to a boil and then reduce to low. Add boursin and stir until melted. Remove from heat and add balsamic vinegar or lemon juice. Serve over crab waffles. Makes 2 servings.
