Raspberries are Hatching!
So,
you wonder, what else would be fun in a fillo shell. I think I might have the
answer.
It’s Hatch chili season in Phoenix so a lot of the Mexican restaurants
will include them on their menus for the month. It can be really fun going out
to eat and if you are brave enough you can try what they’ve come up with. They are
pretty hot so a little goes a long way. It’s also the end of raspberry season
so this is a really inexpensive and fun recipe. (At least it is when everything
is in season.)
I’ve
taken 15 raspberries and cut them into four pieces. Spread these out in the
bottom of the fillo shells. In a small bowl combine 6oz of softened cream
cheese with 2 tablespoons of raspberry preserves and about 3 teaspoons of
finely diced hatch chilies. Fill shells with mixture and top with another raspberry.
Now, put them in your mouth and eat them. (Or you can share them if you want)
