Easy, Cheesy and Oh, So Fancy!


 I love phyllo dough! It makes everything look and taste so fancy. If you’ve never tried phyllo, you are missing a real treat. It reminds me of puff pastry only even more delicate. It also makes a great substitute for pie crusts and even in this casserole. It’s like a fancy pot pie casserole. 

Since I got to chose what was in it, i decided to use some of my favorites like artichokes and mushrooms. I also thought the shrimp scampi seasoning from Healthy Solutions Spice Blends would add just the right spice for this delicate casserole. Hope you enjoy it.  




Artichoke Chicken and Mushroom Strata

1½ cup cooked diced chicken
6 oz canned artichoke hearts, drained, chopped
4 tablespoons pesto, divided
2 tablespoons olive oil
5 oz cremini mushrooms, sliced
2 cloves minced garlic
¼ cup finely green onion
4 oz mascarpone cheese
2 tablespoons flour
1 cup half and half 
2 tablespoons Healthy Solutions Spice Blends Shrimp Scampi
6 oz shredded Gruyere 

1-8 oz roll phyllo dough, room temperature
¼ cup melted butter
½ teaspoon Healthy Solutions Spice Blends Shrimp Scampi
2 tablespoons grated parmesan cheese

1.In a small bowl, combine chicken, artichokes and and 2 tablespoons pesto
2. In a medium skillet, saute mushrooms in olive oil over medium heat until tender. Add  garlic and saute a minute longer. Reduce heat and add green onion, remaining pesto and mascarpone.
3.In a small bowl, combine the flour 2 tablespoons Healthy Solutions Spice Blends Shrimp Scampi and ½ cup half and half. Stir until all lumps are removed. Slowly pour mixture into skillet and stir until it starts to thicken. Add remaining half and half and remove from heat. Add Gruyere.
4.Unroll phyllo and cut to fit 8x8 or 9x9 oven safe dish. Combine butter and ½ teaspoon spice blend. Remove a single sheet of phyllo and place in the bottom of the pan. Brush with butter. Layer another sheet of phyllo and butter. Repeat until you have 6 layers. Top phyllo with ½ chicken-artichoke mixture and ½ mushroom cheese sauce. Layer 6 more sheets phyllo and butter and top this with remaining chicken and then cheese sauce. Layer 6 more sheets of phyllo and butter. Generously butter top of strata with butter and score (Cut) into desired size pieces. Bake for 35-40 minutes at 350 degrees or until golden brown. Remove from oven, cool slightly and garnish with parmesan.  Serves 6-8
